Dom Perignon was a 17th Century monk who strived to create the best wine in the world at the time – oh, and he also invented a little thing called the cork! No wonder then that he’s dubbed as the spiritual father of Champagne.
Upon drinking his first sip of Champagne he yelled “I’m drinking the stars!” Ironic, as these days it’s the stars who are drinking it. The rich and famous sip Dom like it’s going out of fashion.
This is the 27th vintage of this luxury wine, undoubtedly one of the finest vintage Rosé Champagnes on the planet! From a great 2008 vintage and aged for 12 years in the cellars prior to release.
Dom’s Chef de Cave Vincent Chaperon said of this one “‘It’s not even an evolution, but a revolution between 2000 and today…We changed a lot of things: the selection of plots, the way we are cultivating the vines, how we’re pushing the maturity of the grapes. 2008 is a new era; after all this work in the vineyard and winery, we have a lower percentage of red wine than we used to put between 2000 and 2008.”
