“Sanctus comes from three clones of shiraz, each bringing different elements to the final blend. My aim was to achieve both an elevated floral perfume combined with a rich palate augmented by a stronger skin tannin profile. It is my belief that the Shiraz is the red variety best suited to the cooler, drier sites of Australia as it consistently produces wines that are capable of delivering complexity and a magic, ethereal quality, often talked about with pinot noir though seldom achieved in this country. In Australia, Shiraz is holy, hence Sanctus.” Doug Neal – Winemaker
